This tea is one of the favourites among tea connoisseurs. The jasmine plant is grown at high elevations in the mountains of Fujian province, China. Tea leaves are harvested in the early spring and stored until the late summer when fresh jasmine flowers are in bloom. Jasmine flowers are picked early in the day when their small petals are tightly closed. The flowers are then kept cool until nightfall. During the night, the jasmine flowers open and release their fragrance. This is when the tea-scenting process takes place. Afterwards, the tea is, then, blended with the jasmine flowers and stored overnight. The tea absorbs moisture from the fresh jasmine flowers, so they must be dried again to prevent any kind of spoilage.
